Ingredients:

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup cocoa powder
  • 1/2 cup maple syrup
  • 1/2 cup coconut milk
  • 2 flax eggs (2 tablespoons flaxseed meal + 6 tablespoons water)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For the chocolate ganache:

  • 1/2 cup coconut milk
  • 1/2 cup dark chocolate chips

Instructions:

  1. Preheat the oven to 350 degrees F. Grease a 9-inch round cake pan.
  2. In a large mixing bowl, whisk together the almond flour, coconut flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, mix together the maple syrup, coconut milk, and flax eggs. Add this to the dry ingredients and mix until well combined.
  4. Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
